I planted an elephant ear this past spring, but when I dug it up today(fall) there were three plants with roots but no bulb. What happened to the bulb? Will the plants overwinter inside?

Many critters will eat bulbs. It could be moles, voles, gophers, chipmunks, mice and rats or feral hogs, called Javelinas. You can plant them next year in metal mesh cages to help protect them.

My bulb was planted in a pot on my front porch. There were no animals that dug them up.
I have had bulbs dug out of pots on my porch, and the soil was smoothed over so well that I didn't know they were gone until I unpotted it and looked. No bulbs. Chipmunks and squirrels are really good at stealing bulbs.
