We get way too cold here to leave a VFT outside to go dormant as it can get to -20 F. So I bought a mini fridge set to 50 degrees and place my 3 plants over night in it and back in the light in the day. I started this Oct 20th and some of the traps have gotten tiny but several grew bigger than ever. Is this normal to occur if they are going dormant?

Is there room to set a light in the cooler? I think they need SOME light even in Winter.

No I take it out of the cooler after 12 hours and put it under the light on a shelf.
