Hi guys is my amaryllis blooming again? The flowers (red in color) only lasted for about a week. Then these little bulbs appeared. I'm hesitant to cut the stalk down to the bulb like everybody says to do because I don't know what is happening. This is my first time doing this thank you for your help!!!

Those are the seed pods, you can cut them off, and just let the stalk yellow and fall over or cut the stalk off.

You could try your luck with growing Amaryllis from seeds, I found this when I googled seed pods

As the flower fades, the pod at the base of the flower will swell. When it turns yellow and begins to break open, collect the seeds (they look like dry, flattened raisins) and sow them in vermiculite or a seed-starting mixture. When they sprout they will look like grass. In a few weeks bulbs will begin to form.

Another way to start the seeds is the water method. Last year I had a good success rate:
