It's a Euphorbia of some kind, but I'm not sure what species you have there in Greece. There are pictures on Google that look like that and taken in your area labeled Euphorbia myrsinites but they are from photography sites rather than botany sites so I wouldn't entirely trust the IDs.

agree a spurge, probably euphorbia rigida they begin blooming in yellow, an then bracts becoming reddish
