I just bought a mint plant at the grocery store along with special soil for growing herbs and a big enough pot for the plant. I live in Minnesota there's about 7" of snow in my backyard and the temp is 40°F (in mid-april mind you!). Since I live in the basement we only have hy-lite windows down here so I'm not sure how to be sure if my plant will receive enough sunlight...would it be safe to place the potted plant outside in direct sunlight for an hour or so or just leave it in the hy-lite window?

I would look into a little grow light bulb. This way you could grow some things all year long.

That's a great idea! I'll definitely look into it. Also do you know of anyway to keep the room the plant is in from smelling like...well...poo? It's from the kind of soil I used (some kind of organic specialty herb growth soil..I guess organic dirt is a thing) I've tried wax burners, wall plug-ins, etc. But as soon as you walk in the room it still smells really bad. Any input would be great because I'm clueless Confused Shrug!
