Cotyledons are more difficult to ID. When it gets some true leaves, someone should recognize. At this point, my thought is that it may be some kind of cucurbit.

Yeah, it may be a cucurbit but it may not be. Any seeds which are (roughly) shaped like a cucumber's seeds will have cotyledons this way, not just cucurbits themselves.

There are 90+ genera in that family. 3 people thought the seedlings were in that family, maybe 4, if I understood the last comment more clearly.
Joe, you may remember what should or could be sprouting and have ID'd by now, but if they are still a mystery, you can add more pics to this discussion when they have grown some true leaves.
