Hello! I'm trying to identify several plants in the garden at our new home. Any help would be greatly appreciated. This is the first of 8 plants I'm trying to identify. I think it is some sort of root vegetable, as I had to move and replant it in a different area about a month ago.

Prudence, indeed, will dictate that Governments long established should not be changed for light and transient causes; and accordingly all experience hath shewn, that mankind are more disposed to suffer, while evils are sufferable, than to right themselves by abolishing the forms to which they are accustomed.

@green, may be onto something ... leaves sure look like Comfrey, maybe Comfrey (Symphytum officinale) ?
