My son has a small cactus in his apartment. When he got it the "paddles" were all small and thick. Then one started to grow very tall and thin. The dead one was thick and purple. He is wondering why only one part is growing and why it's so thin. He waters it once a week.

Yes, the cactus is stretching because it is looking for light. Try to find a location (if this is an indoor plant) where the plant will "see" the sun for hours a day. Like right by the sunniest window available. Unfortunately the weak elongated growth is likely to fall under its own weight given time, but once the plant is getting good light, it will start making strong pads more like the original ones.
