Can anyone tell me what vine to use instead of Star/Asian Jasmine?

Grew it on an espalier. Beautiful, grew well but died over winter. I live in Zone 6 in northern New Jersey.

Most Jasmine species are not winter hardy in your area. There are a few that are listed for hardiness in Zone 6 and they include J.nudiflorum and J.officinale.
