The best recipes ! Have only a few ingredients ? Correct ?
Let's share our simple recipes, hopefully without "chit-chat", a thumbs up, shows your appreciation to poster of there recipe, or "Stickies" attached !
ATTN : Administration !!! No STICKIES, please.

First ! I'll share my easy, peasy, red enchilada sause recipe, with y'all. 👍👍😎😎😎

For one cup of,
Red Enchilada Sauce :
2 tea chile powder
1 Tbl corn starch
1 tea paprika
1/2 tea salt
Mix with one cup water.
Microwave, 30 seconds, and stir. Repeat, till thickened.
When thickened : Add !
1 tea garlic
1 tea pepper
1 Tbl Lemon, or Lime juice
Mix, and sauce is done.

It also is great, ownce cooled, to add equal parts of mayonnaise to it, for a taco salad dressing. 👍👍

Fish or chicken topping:
1/2 C mayonnaise
1/2 C sour cream
1/4 C parmesan cheese

On foil spread over fish or chicken until completely sealed. Seal foil. Bake until done.

Carnitas
I love this recipe and make a batch every week!

4 lbs Pork Shoulder or Chicken Thighs
2 cups Orange Juice (You can also use sugar-sweetened Coca Cola)
1 T Cumin
1 T Oregano
1 T Salt
1 t black pepper
1 Garlic Bulb (Remove skin from cloves)
1 White Onion, chopped
2 Jalapenos sliced
Add a few Bay Leaves, if you have them.

Oven cook in covered pot at 300F. Chicken will be done in 2.5 hours. Pork should cook 5-6 hours.
Remove meat and shred with fork. For crispiness, put the meat on cookie sheet with ~ 1/2c of liquid and broil for 4-5 minutes.


Pico de Gallo
Save a lot of money, compared with store bought salsa!

10 tomatoes
1 white onion
1 bunch cilantro
2 Jalapenos or Serranos
Juice of one lime
Salt to taste

Seed and chop tomatoes into small pieces. FInely dice onion, peppers, and cilantro, and combine with the lime juice. Add salt to taste.

Cilantro Sauce - for fish tacos, taco salad, or anything else in the Tex-Mex arena:

6 oz plain yogurt
6 oz mayonnaise
1/2 lime, squeezed
1 slice onion, quartered
2 cloves garlic, quartered
6 slices pickled jalapeno
1/2 t cumin
1/2 t chili powder
Freshly ground peppercorns - I usually keep my grinder full of mixed (red, white, black)
Good size handful of fresh cilantro

Whirl everything in a blender or food processor until smooth. You can increase or decrease or change up spices to suit your taste. The important ratio is 1:1 for the yogurt:mayo. If you increase or decrease this, adjust the rest of the ingredients accordingly. Cover and refrigerate for an hour or more for the flavors to meld.

Not few ingredients but easy and easy to keep this on hand in the cupboard.

Killer Casserole (add ingredients to make it your own)

2 cans of Ranch Style Beans
1 can chopped green chilies
1 can of (Rotel) Green Chili's and Tomatoes
1 can Red Kidney Beans
1 can Cream of Chicken soup, undiluted
1 can (Campbell's) Cheddar Cheese Soup, undiluted
2 Cups Shredded Cheddar Cheese
1 bag of tortilla chips any flavor, slightly crushed

Mix all ingredients together except for the chips. Add chips to coat well. Place in greased 9 x 13 casserole dish. Add more cheese on top if desired. Bake until bubbly.

1 pkg Mrs. T's Pierogies
smoked sausage, sliced thick
zucchini, sliced thick
yellow squash, sliced thick
onion, sliced thick
butter, melted
Parmesan cheese
garlic, salt, pepper etc

Put all into a large pot of boiling water. Drain. Put into serving dish. Pour melted butter over all toss carefully. Season to taste.
