Several years ago (probably 2014/2015)....... right before I really discovered Daylilies and my real obsession, I bought 2 bags of daylilies from Costco......

No I didn't label them.
I planted them out in some open space in my stone garden out front. Suddenly this year after many years of slow growth, they are coming to maturity and I am in love with my nameless daylilies!!!

Sooooo, by any chance does anyone know how I might be able to find out what they were selling a few years back??

Don't know how to find out but you might try dabbing some pollen to figure out ploidy. If you ever can find the info at least that way you can narrow it down some (or figure out if it really is a NOID despite what they were selling it as).
