Much like watercress, I would expect that the purity of the environment is paramount. It is much more important for plants living in water grow in uncontaminated water to be consumable, i.e. absolutely no pesticide runoff - groundwater contamination - etc. This would include fertilizers. An imbalance can favor potentially toxic reactions or trigger algae blooms and the like.
