The medium looks fine. The yellow stuff is decorative, not sure what it is but if you like the look of it you can put it back on top of the medium once the plant is potted up.

I would put the plant in a large bowl or small bucket of warm-ish water to soak for a few hours at least. Or over night. See if you can get the leaves started to plump back up. They usually recover from this "diva act" but it takes a little while. The roots should be all green.

Pot up in a vented clay pot if you can - hang the leaves over the edge of the pot and don't bury all the roots either. Clay will evaporate water out and keep it a bit more humid around the plant for you. Your problem assuming you're keeping it indoors, is dry air from a/c so water every second day or so, and be sure to mist the roots thoroughly so they turn green, which indicates they've absorbed a lot of water.
