The elephant's foot seed starts growing with the swelling of the hypocotyl. By the end of the first year, the caudex has grown to approximately 10 mm. (1 cm.) After five years the caudex should have reached a size of 120 mm. (about 5 inches) in diameter.

During the first 3-4 weeks water regularly, probably 2x/week. You don't want the seedlings getting stressed as they are throwing out their first set of roots and leaves–again, if the seedlings dry out too much in this first period you'll risk killing the plant.

Dioscorea elephantipes goes through a period of dormancy for a few months each year. You'll know your plant has gone dormant when the vine dries up and the leaves turn yellow and drop off. When your plant is dormant reduce watering significantly and keep your plant somewhere cool and dry.

also known as Shan Yao, one of the true Yams and it is very good food.
I would grow it, it also is a medicinal and the flavor is very nice.

I first found out about this yam from a Japanese family that lived across the street from me in California.
He and I exchanged a lot of methods and techniques over a 4 year period (I even worked at his nursery for a year).

Remember the leaves oppose directly across from each other on the edible species of true yams.

Edible species of Dioscorea have opposite leaves whilst poisonous species have alternate leaves.

Can take 3 to 5 years from seed to harvest.

Its leaves are palmate, and its fragrant flowers are blue-white with a prominent fringe of coronal filaments in bands of blue, white, and brown. The ovoid orange fruit, growing to 6 cm (2 in), is edible, but is variously described as having a bland, undesirable, or insipid taste.

It can take 12–18 months for a newly planted vine to reach fruiting size.

Passiflora vines are commonly grown from seeds sown in late winter or early spring. Fresh seeds germinate in two to three weeks, while dried seeds take up to four weeks to sprout.
