My plants have a strange growing habit. They seem to scrunch their leaves together and form
a mound. There's plenty of room in the pot but they grow this way and the flowers find it very
difficult to get out from beneath the leaves. Here are a couple photos.

You have at least 2 plants there. When you grow African violets from a leaf, very often you get more than 1 plant, and you have to separate them, and ideally you plant each plant in one pot big enough to grow. What I see from your picture, you have at least 2 plants growing together. Look for the center of the plants (where the leaves are very small and grow out in a circle), and each plant has 1 center, separate each of them and plant each separately in their own pot, big enough for them to grow.

Your plant appears to be suckering and the only way to stop it is to separate the suckers for additional plants. Tightly bunched centers can also be due to over-fertilizing. Here are a couple of pages where you will find information regarding tight crowns and suckers on AV's and tips for removing them and potting up for additional plants.
