Sweet potato greens are supposedly very healthy and the newest "in" vegetable.
A couple years ago I bought an expensive purple Japanese sweet potato at a health food store and sprouted it, then planted it in one of my flowerbeds. This summer while weeding, I pulled up a handful of perfect slips so I planted them in my garden. I recently harvested the potatoes, but missed a few and of course they're sprouting. I came across an article about how wonderful the greens are. I know the deer love them.
So my question is has anyone ever eaten sweet potato greens and if so please give me your opinion.

Oh, yes. My first year orange ones. Leafs have a unique flavor, unlike any other green. Very mild. Eat them raw or cooked. Raw there tender, you can make a salad with just them. Surprise your guests ! Yes 😁, see who can guess ? What kind of green is this ? 👍 Now you got me interested what the purple sweet tater leaves taste like 😕??? Maybe next year.

So now I won't feel bad if I only get small tubers !

Yesterday at local Fresno Ag Hardware, i was wandering around nursery. La la la ! They had a hanging pot with a green plant and a purple plant in it.
I did a double take on the purple plant. Ahh ? WHAT ? 😮??? Is it ? Sure enough. It was a purple sweet potato.
I told my sister, what a silly time of year to have sweet taters, there going to freeze.
But ! Now i going to go get one.
See if i can overwinter it in kitchen window.
Maybe I'll take some stem cuttings and root them if i want more plants. I won't have to go searching for a purple sw. tater. Sound like a winner. 👍

Highly likely that it is an ornamental sweet potato plant. They are rapidly growing in popularity. Designed for looks not palatability of roots.

I'll start looking for a purple one now. Them dudes choose there OWN time to sprout for me. Mine didn't sprout till the middle of summer. One from grocery store and one from a seed potato i bought at nursury in like Feb. I've never been able to sprout one in water or soil, all they do is rot. They have a mind of there own 👹👹👹

I wonder if there is a variety which is better to grow for greens from the vegetable ones?
The only variety that I see locally is Beauregard.

I would imagine purple and orange would have a little different tastes, like purple a bit stronger.

I got a couple of seed sets, of a newer variety, last winter, from ace hardware.
Also, WOW !!! 🙈🙉🙊 I believe, I googled sweet taters. Woha, Dares. A bunch of different varities. New and old. Also, with different maturity days ! I'm sure, you'll like dat !

Yes, I can google, and find the lists of varieties, but if they are not available locally-then I am out of luck !
I have tried ordering slips from on line plant dealers , but by the time they ship them, and I root them--the growing season is too short.

I was thinking. You could find some seed sets, they look like mini potatoes. You could sprout yourself. From seed company, or your local nursery could order for you.
I know you need fast ones, with your short growing season.
It seems like there would be a way to force taters to sprout. Maybe someone hear knows a way.
Mine didn't sprout till middle of summer.
I try water, or soil to sprout them in spring. All they do is rot. 😞

I bought my purple sweet potato at an organic grocery store, it sprouted easily by setting it atop a jar full of water with only the bottom part of the potato touching the water. They grow like weeds.

I think I've always tried to sprout them to early.

The sweet potato for sprouting needs to be organic, but it should NOT have been chilled. All the ones we get here come from California, and they come up by refrigerated trucks.
Then they take a long time to sprout.

I wonder if we could "undo" that refrigeration by maybe warming them slightly? Not cooking them, but maybe keep at ?75 º F or so ?

Sometime I will experiment with the sweet potatoes to see if the process can be made faster.

I remember sprouting sweet potatoes the way Nancy did when I was a kid. Being a NYC kid the outcome was "that's cool" and then we threw them away. Surprising since my parents were from Iowa farm county.

I now live on a large property with a big garden and grew sweet potatoes this past summer for the first time in a long time. I bought plants from a local nursery - pricey at $2.50 per plant. I save some small tubers and I'm going to see if I can sprout same way I sprout my dahlias. I'll keep then in the dark in a cool basement and, in February or March, make them warm and moist - perhaps wrapped in a damp towel. Hopefully, I can propograte my own every year. Any thoughts?

I cut an organic sweet potato in half and then stuck the halves into my constant flow aquaponics bed. Doing really well! There is a potato under there, I promise!

When I was a kid we used to sprout sweet potatoes from the store and grow them as houseplants. And more recently I've sprouted them both to try growing in the garden (not too successful here) and "just for fun." I don't think you'll have any trouble sprouting yours; you could always start them now and just keep cutting the sprouts back and rooting them for planting in the garden in the spring.

My first 😮 ! Successful year of growing S.P. Too. Ive always been hopeless,😟😭 when it came to sprouting one . Rot rot rot city .
I just gave up . What did I do this year ??????? Nothing ....... The sweet tater and mother nature, did the work. I had a few taters in cupboard, getting old, a little bit wrinkly . I grabbed them out one day to cook-em up. AND ! 😮 ??? What's this ? One had 2 sprouts on it . 😀😀😀. Cut her between two sprouts and planted. I guess The tater decided , it was time to get a growing .

I hope you saved enough of you taters to play with. Ya know experiment ! Is basement dry ? Your moist towel ideal , I don't know , but sounds like something I might try myself 👍...
After a while in cold, I would move them into dark place in house. If they start to sprout early. Do as , Sandy, @Weedwhacker said.👍.
Im thinking we'll be successful for next year, since wee have our own taters, we grew, to sprout 👍 !!!

Thanks for asking, this year I'm not planting any sweet potatoes, that space has been allocated for daylily seedlings. Next year at the rate I'm going we will lose some yard to them.
