dI have started lettuce, mustard, peas, & beets in regular six packs under grow lights, & grown into small plants which I cut. I know the peas will regrow, not sure of the rest, but they taste great. Wasn't thinking about bean sprouts at the time I decided to begin these traditional outdoor crops inside for a little winter freshness.
Not sure if this is considered sprouting, but either way, they are still tasty.
