Mom wants to grow skinny beets this year....she's tired of how long the round ones stake to cook.

Any recommendations and sources?

Lee Anne...even the "skinny beets" will take about 55 days to mature ("cylindra" comes to mind). There are earlier maturing varieties though that are the round ones...Red Ace is a good one and has great greens as well. Ruby Queen is fairly early, too.

I wonder if your mom has been growing only sugar beets, which take nearly 100 days to mature and that's why her disappointment?

Too funny!

As for cooking I tend to bake mine by the panloads and walk away while they're cooking. I suppose I could slice 'em thin so they boil faster but I don't care for boiled beets anymore.

Okay, okay...I should grow some skinny beets and cook them as if I was cooking for your Ma~! :>)
