Liz, We share very similar daily routines...just only six months delayed....
We make our own cream cheese. However we expect to add mascarpone this season, in our very small scale milk operation. I want to add mozzarella to our routines plus traditional Armenian thread cheese. We'll see. Milk sheep are just like goats in terms of care. The milk is almost as fatty and thick as goat's milk but the taste is almost indistinguishable from cow's milk. Do you make any blue cheese?
