I've noticed that the Mentha parent plant data points aren't showing in all of the other Mentha entries.

Is there a new mint added that didn't get the data? Or a particular entry you're referring to?

(For my future reference, the mint parent is Mints (Mentha) )

Aren't the parent points supposed to refer to all the Menthas?

Yes.

I looked into this and I think what is happening is this:

If a plant is a parent plant and the databox for it is updated, the databox details is passed down to all present and future child plants.

But if the databox is already there, and a plant is subsequently marked as a parent, then the data is NOT copied down to past plants, but is copied down to future children plants.

I think that's what is happening here. I have resolved it by editing the databox again (without changing anything) and upon approval all the details should have been copied down.

I tip my hat to you. That seems to have fixed the problem. The box that says "Matching plants under this entry" needs to be removed.

That box appears on all parent plant and describes the rule set for matching child plants. Usually it's just the genus name.
