Hi there, Welcome!
I have started a mini plant table in my house and I just got gifted a dragonfruit cactus on Vday. It hasn't changed much, but it looked like it needed to be replanted. I noticed that some of them are laying down with leaves on the bottom. I pulled a very small one up and out, and it has a root. Should these separated and replanted or should i put something next to it that will help them expand upwards?
I also have a plant nearby that is slowly withering from too much hydration but is doing better now. Crossing Fingers!

That is a pot full of cactus seedlings, like dozens of them. At the bottom of each stem you can see a pair of seed leaves, which were all the plant was born with before it started to grow a stem. Somebody threw a whole bunch of seeds in the same pot and this is what grew out.

If you want to have dozens of dragonfruit plants, separate them into their own pots or a tray (they look like they could handle this right now). Otherwise you can let them fight it out (a few will win, most will lose) or thin the herd a bit for now, maybe separate a small group of 3-4 plants and allow them to get a little larger before you separate them to individual containers.

Do not water the plants right after separation. Give the roots a few days to a week to recover first, depending on whether they were damaged.
