This looks like Agave attenuata, not Agave potatorum. The leaves lack teeth, and they are a different color and shape than potatorum. I'm not 100% convinced it is attenuata, but it appears to be growing indoors in Canada, which no doubt affects how it looks. Anyway, I welcome feedback and disagreement, and in the meantime I will move the image above and the second one below to the listing for Agave attenuata.
