My first time growing Crinum, but I've grown amaryllis, and this seems a little weird. There is an bloom stalk growing next to the main one. Is this a typical way for them to grow?

That is absolutely the way they grow, the bloom stalk emerges next to the leaves. Just to be sure, I went outside to examine my big crinum lily which has just finished blooming. In a few years. your cranium will fill that pot and put on a spectacular display.
