These can give and give and give you green onion tops for a loooooong time!

I'm going to try that. I have done celery and eventually it does go mushy but with the clipping of the onion greens
maybe that keeps it fresh longer.

Cheryl, how often do you change out the water?

I change the water every other day at least but usually daily.

Do they get milder or spicier than the originals? More tender or more tough?

I only eat the green tops so that the roots can grow. (Sometimes I trim the roots)They taste the same to me-mild green onion flavor. You can also grow the end of a white/red onion in water. Those greens might be stronger?? I will try that, too! With the Romaine, they all look nice on my window sill.
