Good idea...years ago my mother made "daylily fritters" with the flowers... I hated them at the time! But that could have been the way she cooked too (she was not a good cook!).
So we want to cultivate daylilies for garden vegs....I realize that this article gives details on the ditch lily, old fashioned style...but wondering about new varieties? Not so worried about absolute details for nutritional facts, just...as long as they are edible, not toxic...anyone know for sure? If they are not toxic then a good way to use up those ugly seedlings...and yes, they do happen!

The old ditchlily is the only daylily that I have any experience with eating and in looking around at other sources most seem to waver about the edibility of the newer varieties. I really don't know what the difference would be or how hybridizing could have affected its edibility in a negative way, but even so, most still won't commit to an answer one way or the other. Including me. I nibble my daylilies, but I usually stay with the old reliable wild ones, the ditchlilies.

If I find a definite answer one way or the other, I'll for sure let you know.
