Plants Admin

The amount of variegation displayed on new leaves in early Spring (inset photo) has really fallen off. Could this be a result of culture here? Giant Japanese Butterbur (Petasites japonicus subsp. giganteus 'Nishiki-buki')

If it's growing in some sun, the variegation is usually more pronounced. It's gorgeous. I'm going to plant that one as soon as I can. Thanks for posting.

What a cool plant.

Evan and/or Tee, in the listing it shows under "Uses" it is a vegetable. Is this something either of you have eaten? If so, leaves or rhizomes?

Didn't know it was edible Shoe. PFAF says you eat it like Rhubarb. Will have to give it a go.

Here is an answer to an old question...
The emerging early spring growth (fuki no to, or butterbur buds) are eaten, the stems are eaten, the leaves are eaten.
Cooking is required...it tastes bitter. Some people like a bitter taste. Preparing by blanching/chilling then soaking will remove some of the bitterness.
