I have Hymenocallis 'Sulphur Queen' in pots but want to put them in the ground. I am in zone 8b. Will they be ok?

They're listed as hardy in zones 8-10, so they should be fine. I find plants and bulbs planted in fall are sometimes more susceptible to cold damage (than those planted in spring, that have had a growing season to settle in). Might be a good idea to mulch them thickly.
