I ran across chicory because it was the source of some inulin fiber I bought as a prebiotic fiber -- prebiotic fiber supports the growth of healthy gut bacteria which is characteristic of a strong immune system. Prebiotic fiber supports probiotic gut bacteria.

I just received and have now planted a young chicory plant from a friend, I sure hope I can keep this one alive. All the others I've tried have been transplants from along a roadside and I've lost every attempt I've made Maybe this one will grow for me.

Sharon. You are having trouble growing weeds? I think many of them have a useful purpose--if we only knew.

I remembered this from a Cajun Louisiana friend. Cajuns enjoy chicory with coffee--you can get it at Cafe du Monde in New Orleans.

Ha! Sometimes weeds are peculiar about where they plant their roots. Chicory is one of them. When we had relatives who lived in E Texas, they would send us chicory laced coffee. . . mostly just for me. I love it. I'm pretty sure they got it in Louisiana.
