Some of us who are alone cook in smaller quantities. I cut an Acorn, Butter-nut or other smaller squash into serving size pieces and wrap each in Plastic Wrap. The chunks last several days in the frig. When I want one I pop it into the micro-wave for 5 minutes. If it isn't soft at the end of cooking time I cook for 2-3 more minutes or until soft. Butter and salt and pepper are my preferred additions.
