Plumerias Photo Contest Winner: 2015 Charter ATP Member I was one of the first 300 contributors to the plant database! Garden Ideas: Master Level Forum moderator
Region: Florida Cat Lover Garden Sages Cactus and Succulents Tropicals Hosted a Not-A-Raffle-Raffle
I have several pounds of very ripe tomatoes, both beefsteak and roma. I'm not much for canning so what do you all suggest I do with them? I have to get to them fast!! @Newyorkrita can you help?

No help from me. I don't do anything with my tomatoes except eat them fresh and give them away to friends and to the entire neighborhood.

You can also do a hot water dip on them until the skins split, then peel them, cut them up and cook up some tomato sauce then freeze it in ziplock bags. I do this when I have extra tomatoes, adding no seasoning instead I add seasoning when cooking the dish in which they are used.
If you want to be happy for a lifetime plant a garden!

I'm with Betty. It's probably the easiest thing you can do with them and it uses up a LOT of tomatoes. Sauce also keeps really well in the freezer.

Ditto. Last year, I gave my surplus 'maters to ANYONE who would take them!! Not the postman (he said he had his OWN surplus problem!), met all my new neighbors in a 1 block radius (my garden helkper got HIS neighbors in addition), the maintenance men and landscapers (for my property management co.) helped me out by taking some when they'd stop by, my Granny took several sacks over to HER neighbors, took 2 big sacks full to my doctor's appointment for the stuff, but when my neighbors started not answering their doors and I found myself chasing a property mgt truck (to give them 'maters). . . . I got frustrated and piled all dem surplus 'maters in a big basket, stuck a labeled card on the side ("FREE. . . Organic Tomatoes from my Garden") and plopped it atop the community mailboxes at my Granny's condo complex. By the time I had parked down the street, a little ol' lady in a housecoat & curlers was waving while collecting some tomatoes! Thumbs up

THIS year, aside from delivering to those of my neighbors who're retired and/or disabled. . I plan on skipping right to the ol' basket atop those mailboxes!!! nodding

You can also just rinse them off and put them in a freezer bag in the freezer. When needed for sauce or soup take out what you need, let them sit for a bit,peel and use. Works quite well Thumbs up

I made a huge batch of pasta sauce yesterday, all in the freezer now.
