If you don't want olive oil, you can also freeze chopped herbs in ice cube trays with enough water to cover them. Perfect for adding to soups or sauces that can handle a bit of added water.

Alton Brown has a great method for quick drying your herbs. All you need is a box fan, several home-air filters, and a couple of bungie cords. I keep forgetting about this idea but think it's great!
