Hello Everyone,
I m new here I wanna ask a few questions hopefully you guys can help and I also help you if anyone needs my help,
anyways,

This my first year Canning we have about 300-400 Tomatos plants and other vegetable and would like some advice on canning we have plan to put in jars about half of all our vegetable, this is family tradition i m very happy to be part as growing up all i remember was smashing tomato in the garage with my nano and nona, so this year is my turn to introduce to my family but before i do i have to make sure i m doing the right thing and thats why i m here asking for some canning advice and also what machine should we be looking at because the smashing days are over 2016 now everything is automatic please feel free add a comment if you plant for canning and if you have any question or need help with planting we living on 50 acres so planting we know best thanks

For the tomato 'smashing' job I use a food mill. Mine is only cheap plastic with some metal parts but I would advise anyone to invest in one that has more metal and less plastic which is more difficult to clean.

If you have something like a KitchenAid mixer there are food mill attachments available that will remove both the skins and seeds.

I should mention that my mom did not remove the seeds...that was my job. I had to gently squeeze each tomato so most of the seeds would fall into a bowl or I would coax the seeds out with a small spoon. Later I used a sieve to retrieve the liquid and the seeds were saved for next year. (We learned about seed-saving from an old Italian woman - she spoke no English but that didn't stop her from teaching us. Hilarious! )

I usually follow what my mom taught me (after my dad taught her); drop the clean tomatoes in boiling water for a short time - 30 to 40 seconds - then into ice water - the peels almost fall off on their own. The peels go into the compost bin.

It is possible to utilize a blender but if you are too aggressive you will end up with more tomato sauce than tomatoes.

For my tomato smashing I use Melissa, age 18, Lillian, age 13, and Lucinda, age 21...........and they each get a pair of gloves and a big pan of tomatoes to smash. Hilarious!
I find that doing it the old fashioned way always creates the best memories.

If you plan to process any low-acid tomatoes, be sure to add lemon juice if you are water bathing. I always pressure canned my tomatoes to be on the safe side. Hand smashing sounds fun, I'd go with that! Or if you can find an old hand crank food mill, that's also pretty fun (and messy, best done outdoors).

If you are new to canning, I would highly recommend the book "Putting Food By" ( https://www.amazon.com/dp/B0053YNF46/ ) or something like the Ball Blue Book ( https://www.amazon.com/dp/B005SK6Y1Q/ ). Recommendations for canning safety have changed greatly since our parents' and grandparents' time... as have the tomatoes (and other veggies) that we are growing and processing. Smiling
