Any ideas what happened to this seed pod?

Insect or bird damage. Sometimes that will happen. If your seed is viable, most of it should still be just fine, just that small area will be affected. The rest will continue to mature, at least that has been my experience here.

Same with my experience, though I could have an entirely different perp here so can't say for sure.
