@PlantMania - Not all hollies have sharp edges. I've been looking at them but don't remember which is which.
One more thing about bamboo. The stuff is really tough. Won't be that easy to chop.

I've been eyeballing shrubs and maybe will come up with a different suggestion or two. But I think we're in a different micro-climate so who knows. Maybe take a look at the Lady Byrd Johnson Wildflower Center. Especially helpful is to read thru some of the suggestions made by Mr. Smarty Plants. He's not responding now but past Q&A are there. Be sure that it relates to your zone.
