All About Sweet Potatoes

Sweet potatoes are nutritional powerhouses, but they enjoy less popularity in America than in most parts of the world. Here, the white spud is king. Apart from the color, the two do bear a strong resemblance, but some differences emerge when you dig a bit deeper.

I'm with you, Margaret. I like them baked or steamed the best. The recipe in the article is the one I remember from childhood. That's what I thought sweet potatoes tasted like for the longest time. Now it's mostly plain with *real* butter for me. Big Grin

Jonna, that's interesting that you have the white and the light orange there. I've yet to have the white. There are so many varieties and I think I've only had a few kinds over the years. And yams, of course. I know there are basically two types of sweet potatoes, the moist and the dry.

It's true - a lot of different toppings are promoted too (along with sugar, groan). I've been happy with cinnamon, myself.

And that becomes the problem. But I suppose still healthier than many things ... at least you get some of the nutrition of the sweet potato. Shrug!

One thing I miss here in Yucatan is the camote (sweet potato in spanish) vendor that is common in other parts of Mexico. He has a gas fired steam tray, pretty large and more like the buffet things that roll open for roast beef, attached to the front of a tricycle and there is a steam whistle attached. He rides around the neighborhoods blowing this very distinctive sounding steam whistle. You can hear it for a block at least and you go out and buy steamed sweet potatoes from him. They are fabulous! It may be that they are only sold like that in the winter, they are a great treat on a cold night. Here in Yucatan I guess no one thinks it is cold enough to sell them door to door. I miss that steam whistle and the fresh hot camotes.

I have grown to love sweet potatoes in the last couple years. I grew about 100lbs this last summer. We gave 30lbs to the food bank and I'm making my way through the rest with baked sweet potato fries & roasted sweet potatoes & mangos. Great article on a great topic!

Thumbs up I've never had sweet potatoes and mangoes together but that does sound like a good combination. Do you roast them together or separately and then combine them or?
