I'd think you could put 4 or 5 spinach plants in a 15 liter container, David. They don't have really deep roots and I usually thin them to about 25 or 30cm apart.

You could leave some of the others in the shallow container, and just use those ones up first. Still thin them gradually (use the baby leaves for salad!) until they are far enough apart to let them get big.
