I do mine much the same way although I don't put them in the fridge. I have done this for a few years now and they turn out wonderfully. I share my seedlings with many neighbors and friends. Here are some that I started from seeds that I have collected.
This one is Lady Baltimore (I think). I collected many seeds, but only got 2 to sprout. But they are beautiful. They bloom from seed the first year.





The red ones seem to do the best. I got a lot of them to sprout and flower last year.
