Might be snails or slugs eating your bok choy .. sprinkle some diatomaceous earth around the base of the plants .. totally inorganic and will stop snails/slugs in their tracks .. it's like walking over glass shards for them. I
Check out my Idea for Masonry Ladders .. after looking at pictures of your beds, I think they'd be perfect to use as a frame for whatever you want to put over them, also for some of your climbing veggies..
