Gabe - mints do like moisture. During warm weather, you may end up watering more frequently. Droopy leaves can be your signal to water. However, as much as mints like moisture, I wouldn't let them sit in saucers with water - that might really encourage rot. When you water your pots, let the excess water drain into the saucers and then empty the saucers.
