Clumping bamboo are gorgeous, grow fast, don't get out of hand and are evergreen. I would choose Black Bamboo or Sunset Bamboo, both with visual interest and easy to get ahold of. If you want something more formal, you could grow a plant as an espalier. There's always ivy or Creeping Fig. Living walls are quite popular now also.
