Mid July for my zone. For your zone 5 I would say for sure no later than 1st of July.

For fall peas you have to get your timing just right. Thing is with peas they can take pretty much a lot of cold weather in the fall, the plants will not die. But they will not set a crop once it gets too cold.

Really there is no difference in the way you grow snaps or snow peas.
