I suggest feeling with your fingers just where the cone starts from and where the last set of non-bloom stem leaves are, at the center of rosette head. At the point where the coning starts is where I would lop off the cone leaving a few millimeters of stem left where the offsets will come in.

Here's a pic of one that Tim did recently. Note a wee bit of the stem is still visible.
