They want to be trees; so they generally form a trunk and then start branching. You can do a 6-7 ft but you'd have to start with a low, branched cutting. Most trees go to 8-10 ft; however, if you start with a nice compact variety you could easily get a 6 ft tree. I have a Thailand Red that in 10 years is still only 5 ft tall.
