I can't speak for mice but young deer regularly nibble on toxic plants like Plumeria. They just do not know any better and I'll see big tears in the leaves and sometimes the growing tip, where they have tried a bite. It is usually a one time thing, they are quick learners. We only see this when the new fawns are around.
Minds are like parachutes; they work better when they are open.
