Yes, I use this recipe for pancakes and omit the fresh ground nutmeg and vanilla.
It's a great recipe for pancakes as is, but when I add the lemon I don't think the flavors would compliment each other.
In one bowl, mix the dry ingredients together.
1 1/2 Cup Flour
3 T sugar
1 T Baking Powder
1/8 teaspoon freshly ground nutmeg (DO NOT USE ANYTHING BUT FRESH!)
1/4 teasp. Salt
In another bowl beat
2 large eggs (room temp)
1 1/2 cup buttermilk
1/2 teaspoon vanilla
3 T melted real butter.
Add the wet ingredients to the dry while whisking until smooth.
For Lemon, Blueberry pancakes, I omit the vanilla and the nutmeg and add the zest of one lemon. I put the batter on the griddle, then add either fresh or frozen blueberries.
I buy the lemon curd, although I just got a recipe for it but haven't tried it yet.
I mix enough milk with cream cheese to make it the consistency of honey. I put it into a honey jar and squeeze ribbons of it onto the pancakes. Do the same with the lemon curd, you may have to warm it some to make it come out of the honey jar in nice ribbons.
Or, if you don't have the energy to make them, you can get these at Perkins at times, they aren't always on the menu though. This recipe is better then Perkins!
