Can never have too many thymes, but I'm especially Crossing Fingers! for lavender thyme cuttings since that one is new to me! Great use of those plug trays! Thanks! Thymes will often root in water... I used to put ctttings in water then stick when they startedd striking roots. Not sure if that was more successful than just sticking unrooted cuttings, just another method to try. Now I mostly layer (bury or pin down a long stem, sever from mother plant after roots develop, let it grow a little longer before moving). Your new beds should self-layer, or you can help them along.
