Orchids don't mind having some of their roots above the medium, as you can see. If it were my plant, I'd be inclined to leave it in that pot as a base, and set up a piece of cork or a short branch of some kind for those aerial roots to attach to.

But I'm not that familiar with Coelogynes so hopefully someone else will advise you on this.
