I can't identify the Japanese Maple in your photo, but to answer your question: Yes, some varieties can vary in color depending on the amount of sun, however most are true to their variety color.

There are many green varieties that are green in full sun. Hubby and I are Japanese Maple nuts. We owned 10 in our last home and currently have 8 varieties in our new home.
