My first A1C was 9.7, 3 months later (after changing what I eat) 6.5. Last test (8 months ago, yes I am due for another test) 6.0. I only eat one vegetable and no fruit. Jicama. A Mexican tuber. I cut it into quarters, peel it, slice it into 1/4" slices and store them in a bowl of water in the refrigerator. Crunchy. Takes a bit like apples, pears. I eat about 1.5 to 2 lbs. per day. My go to snack. Only sweet thing in my house. Lots of fiber and vitamins. Here's figures for 100g portions:

Some impressive numbers.
