If you only need the handle to not-spread-so-wide, and the jaws DO open wide enough, even when the handles still fit your hand, you could wrap and tie some strong twine (or twist some wire) around the handles so they CAN only open up part way.

Now they will always fit your hand, but the jaws might not open wide enough for some stems.
